I have recently decided that it’s probably a good idea to use ‘fake’ eggs (e.g. Egg Beaters ("healthy real egg product")) instead of actual "80% of your daily cholesterol (each)" eggs. This reduces my morning cholesterol load for breakfast from approximately185% to 25%.

Unfortunately this means my "successful egg flip" statistics will never see the light of day which is a shame as my percentage of successful egg flips was even better than my percentage of "not breaking the yolk."

If you’d like to try this at home: (1) liberally spray anon-stick pan with cooking spray, (2) add two eggs (shell removed,natch), (3) cook until the eggs are firm enough to hold together and slide around in the pan, (4) with a deft flick of the wrist launch the eggs into the air, with a back flip and, (5) catch the eggs in the pan without breaking the yolks.

You didn’t think I used a spatula, did you? Geez…
